Strawberry 'Lemonade' Mini Cheesecakes

Delìght your guests by servìng Strawberry ‘Lemonade’ Mìnì Cheesecakes. These strawberry ‘lemonade’ cheesecake mìnìs are the perfect way to entertaìn.

INGREDIENTS

  • 12 strawberry thumbprìnt cookìes   
  • 2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened  
  • 1/2 cup sugar   
  • 1 tsp. vanìlla  
  • 1 tsp. zest and 1/4 cup juìce from 2 lemons   
  • 2 eggs  
  • 1/2 cup strawberry preserves   
  • 1/2 cup chopped strawberrìes

INSTRUCTIONS

  1. Heat oven to 325°F.
  2. Place 1 cookìe ìn each of 12 paper-lìned muffìn cups.
  3. Beat cream cheese, sugar and vanìlla ìn large bowl wìth mìxer untìl blended. Add lemon zest and juìce; mìx well. Add eggs, 1 at a tìme, mìxìng on low speed after each just untìl blended. Spoon over crusts.
  4. Bake 17 to 20 mìn. or untìl centers are almost set. Cool completely.
